How to Eat Caviar
Caviar is easier to eat than the mythology around it suggests. Most "caviar etiquette" is hotel marketing or first-timer anxiety. The actual rules are few, and they're about taste, not ceremony.

The default first purchase. 30g of Osetra is the tin to keep in the fridge when you want caviar without debating species. About one ounce: a tasting portion for two, or two sittings for one.
What makes Osetra (Acipenser gueldenstaedtii) the classic is its balance: nutty, with a subtle almond finish that lingers without dominating. Where Kaluga Hybrid is buttery and Siberian is mineral, Osetra sits in the middle. It works with Champagne, dry sake, eggs, blini, baked potato and brioche. There is no occasion where Osetra is the wrong choice.
Open the tin, set out warm blini, pour Brut Champagne and serve straight from the fridge. The pearls hold their structure for 2 to 3 days after opening, so you can finish it across several sittings.

For a first tasting or a small garnish, choose 30g. For two people, 50g is a great size. For hosting, gifting or a full caviar service, choose 125g or 250g.
For tasting, plan about 15g per person. For a generous serving or a caviar course, plan 30 to 50g per person.
Kaluga Hybrid is smooth and buttery. Beluga Hybrid is delicate and creamy, with the largest pearls. Osetra is nutty and balanced. Siberian is bold and mineral. White Sturgeon is mild and approachable.
Keep caviar refrigerated in the coldest part of your fridge and never freeze it. Once opened, finish it within 2 to 3 days.
Warm blinis, crème fraîche, soft-boiled eggs, boiled potatoes and Brut Champagne.
The most common mistake first-time buyers make is under-buying. Caviar is meant to be tasted in real portions, 10 to 15 grams per bite, and those portions add up quickly.
