Shipping & Delivery
How is my caviar shipped?
Overnight / Next-Day delivery only. Every order is packed in a specialised insulated box with gel ice packs to maintain temperature throughout transit. We don't offer ground or standard shipping for caviar — temperature control is non-negotiable.
Shipping to the 48 contiguous US states only.
What are your shipping days and cut-off times?
We ship Monday through Thursday only, to prevent any package from being held in a carrier warehouse over the weekend. Cut-off is 10:00 AM EST.
When you order:
- Orders placed Monday–Thursday before 10 AM EST ship the same day and arrive the next day.
- Orders placed Monday–Wednesday after 10 AM EST ship the next day and arrive the day after.
- Orders placed Thursday after 10 AM EST through Sunday ship the following Monday and arrive on Tuesday.
We do not deliver Saturday, Sunday, or Monday. We do not ship on major US holidays.
How much does shipping cost?
Shipping is calculated automatically at checkout. The rate depends on destination and total order weight — heavier orders require more ice and insulation. You'll see the final cost before confirming the order.
Do you ship to Alaska, Hawaii, or US territories?
Not currently. We ship to the 48 contiguous US states only. Cold-chain shipping to AK, HI, Puerto Rico, Guam, and US Virgin Islands requires specialised logistics we haven't yet built.

What if there's a weather delay or carrier disruption?
We use premium overnight carriers, but severe weather and network disruptions occasionally cause delays beyond our control. Our insulated packaging is designed to hold temperature for a reasonable delay window.
If your package is delayed by the carrier and the product arrives compromised, contact us within 24 hours of delivery at info@justcavi.com with photos — we'll file the claim and arrange a replacement
Can I schedule my delivery for a specific date?
Yes. At checkout, you can select a preferred delivery date (Tuesday, Wednesday, Thursday, or Friday only — we don't deliver weekends or Mondays). We'll process and ship to align with that date.
Useful for gifting, anniversaries, and events. Book at least 5 business days ahead for holiday-adjacent dates.
What if nobody's home to receive the package?
Caviar is perishable. If the package sits outside in heat or overnight, the product may spoil — and we cannot refund or replace spoilage caused by a missed delivery.
Please track your shipment and ensure someone is available to refrigerate the caviar immediately on arrival.
If you won't be home, ship to an office or arrange a hold-at-location at the nearest carrier facility through the tracking link.
The ice packs arrived melted. Is my caviar ruined?
Probably not. Our packaging is engineered so the ice is melting by arrival — that's the end of the cold-hold window, not a sign of failure. Feel the tin: if it's cold to the touch, the caviar is fine. Refrigerate immediately and consume within 2 weeks (rather than the usual 4).
If the tin feels warm or room-temperature, contact us within 24 hours at info@justcavi.com with photos — we'll replace it.

Claims & Refunds
Can I return caviar if I don't like it?
No. Caviar is perishable, strictly temperature-controlled food — once it leaves our facility, it cannot be resold. All sales are final.
We don't offer refunds based on personal taste. Caviar is a subjective experience, and we encourage first-timers to start with The Introduction — three species in small portions — to find your preference before committing to a larger tin.
What if my order arrives damaged or spoiled?
We'll replace or refund it. Here's exactly how:
- Email info@justcavi.com within 24 hours of delivery
- Put your Order Number in the subject line
- Attach clear photos of: the damaged tin, the interior packaging (including ice pack condition), and the exterior shipping box
Once we review the claim, we issue a replacement or full refund to your original payment method. We handle these promptly — this is our responsibility, and we stand behind our product.
What if I received the wrong item?
Contact us within 24 hours of delivery at info@justcavi.com with your order number. Do not open or consume the incorrect item.
We'll ship the correct product overnight at no additional cost.
When are you unable to issue a refund or replacement?
We want to be upfront about these circumstances to avoid disappointment:
- Incorrect address. If the shipping address at checkout was wrong or incomplete, we can't cover resulting issues. Double-check before confirming.
- Missed delivery. If the package sits outside all day or the recipient isn't home and the product spoils, this is outside our control.
- Improper storage after delivery. If the caviar wasn't refrigerated immediately on arrival, we can't replace spoilage.
- Personal taste. We don't refund because the product didn't meet your flavour expectations.
For everything else — cold-chain failure, damaged packaging, wrong item, genuine quality issues — we replace or refund in full.
Can I cancel an order after placing it?
All sales are final once placed. Perishable orders are queued for packing quickly and cannot be "un-sent".
If you placed an order by mistake, email info@justcavi.com immediately. If we catch it before packing, we can cancel — but this window is short. Double-check your cart, address, and delivery date before hitting confirm.

Products & Sourcing
Is your caviar real sturgeon?
Yes. All black caviar we sell is genuine sturgeon — Osetra, Kaluga Hybrid, Siberian, White Sturgeon, and Beluga Hybrid. Each tin carries a CITES permit number verifying species and origin. Keta and Trout are salmon and trout roe respectively (technically "red caviar"). See oursourcing pagefor full details.
What's the difference between caviar and roe?
Under FDA labelling rules, only salt-cured roe from sturgeon species (Acipenseriformes) can legally be sold as "caviar" in the US. Roe from salmon, trout, or other fish is legally "roe" — though it's often casually called "red caviar" in general usage.
Our sturgeon products are labelled "caviar"; our Keta salmon and Trout products are technically roe.
Is it wild or farm-raised?
All farm-raised. Wild sturgeon populations are CITES-protected and wild caviar is not commercially available legally. Anyone claiming otherwise is selling illegal product.
Our sturgeon mature 7–15 years at partner aquaculture facilities before harvest.
What are the main ingredients used in your products?
We use a wide range of natural and organic ingredients in our products. Each product has a unique formulation designed to provide specific benefits. Common ingredients you'll find in our products include botanical extracts, plant oils, vitamins, and minerals, all carefully selected for their nourishing your body.
Is Beluga Hybrid the same as real Beluga?
No, and we're clear about that. True Beluga (Huso huso) is critically endangered and CITES Appendix I — effectively banned from commercial trade. Our Beluga Hybrid crosses Huso huso with Acipenser ruthenus (sterlet), producing a legal, farm-raised hybrid with comparable pearl size and texture.
It's what serious caviar buyers choose when they want the Beluga experience without the legal or ethical issues.
Which species should I start with?
Osetra for the classic experience. White Sturgeon for the mildest. Kaluga Hybrid for the creamiest at a mid-range price.
Or — The Introduction set: 30g each of Osetra, Kaluga Hybrid, and Siberian. Taste side by side, find your preference.
What's in each tin besides roe?
Roe and salt. Nothing else. We use the traditional malossol method — 3 to 5% salt by weight. No preservatives, no pasteurisation, no additives. This is how caviar has been made for centuries.
Is caviar safe during pregnancy?
We don't give medical advice. Current general guidance suggests caution with unpasteurised fish products during pregnancy due to listeria risk — our caviar is not pasteurised.

Handling & Storage
What should I do when my caviar arrives?
Refrigerate immediately. Place the tin on the bottom shelf, back wall of your fridge (coldest zone). Don't put it in the door or in a chill drawer.
If you notice any damage — warm tin, broken seal, compromised packaging — photograph it immediately and email us within 24 hours. See our storage guide for full handling instructions.
How long does unopened caviar keep?
Up to 4 weeks refrigerated at 28–32°F for sturgeon caviar. 5–6 weeks for red caviar (Keta, Trout). The sooner you eat it, the better — but unopened tins are stable within these windows.
How long does opened caviar keep?
2 to 3 days, resealed correctly: cling film pressed directly onto the caviar surface, lid replaced, kept refrigerated. Full instructions in our storage guide.
Can I freeze caviar?
Not sturgeon caviar. Freezing ruptures the pearl membrane and destroys texture — you end up with caviar-flavoured paste.

Do I need a special spoon?
Yes. Metal spoons (silver, stainless steel) react with caviar and create a metallic note. Use mother-of-pearl, bone, horn, ceramic, or plastic.
We include a mother-of-pearl spoon in all sets. Available separately for $9.
How do I know if caviar has gone bad?
Fresh caviar smells clean and briny. Spoiled caviar smells fishy, sour, or ammonia-like. Other signs: mushy or broken pearls, excess liquid pooling, greying, or a bitter first taste.
When in doubt, don't eat it. Email us at info@justcavi.com within 24 hours of delivery with photos if something looks wrong.

Orders & Payment
What payment methods do you accept?
All major credit cards (Visa, Mastercard, Amex, Discover), Shop Pay, Apple Pay, Google Pay, and PayPal.
Is my payment information secure?
Yes. All payments are processed through Shopify's PCI-compliant secure checkout. We don't store credit card information on our servers. Full details in our privacy policy.
Do you offer discounts or promotions?
Sets are already priced below the sum of their parts (The Introduction saves $64, The Ritual saves $225, The Table saves $102). We don't run sitewide sales — pricing is consistent. Individual promotions may apply to specific products or seasonal campaigns; watch your email if you're on our list.
Who operates Just Caviar?
Just Caviar is operated byIconik Foods LLC, an FDA-registered food company based in New York. Our facility handles all receiving, cold storage, and packing. This is our full legal entity for invoicing, corporate orders, and any formal correspondence.

Gifting
Can I send caviar as a gift?
Yes. At checkout, select your preferred delivery date (Tuesday through Friday — we don't deliver weekends or Mondays). Make sure the recipient will be home to refrigerate the package immediately on arrival.
The Table set comes in a gift-ready presentation box by default — no additional wrapping needed.
What if my recipient isn't home to receive the gift?
This is the biggest risk with gifting perishables. If the package sits outside all day, the caviar can spoil — and failed delivery due to the recipient not being home isn't covered by our replacement policy.
We strongly recommend confirming the date with the recipient in advance, or shipping to their office. Choose a delivery date when you know they'll be available.
