Halloween appetizers with sturgeon caviar and Keta salmon roe on a dark table

Halloween Appetizers for Adults: 5 Caviar Bites That Look Spooky and Taste Grown-Up

Halloween food for grown-ups doesn't have to mean candy corn and green food coloring. Dark rye, purple potatoes and glossy pearls of caviar give you a table that looks a little sinister and still tastes like a real party. Sturgeon caviar adds deep, shiny dark accents. Salmon roe brings the season's orange without a drop of dye.

Below are five ideas, from deviled egg "eyeballs" to a spiderweb caviar platter. For a party of eight, pick two or three and plan on four to five small bites per guest. Keep the caviar in the fridge until the last minute and always add it at the very end.

Which caviar works for a Halloween table?

For dark, glossy accents, use a sturgeon caviar like Kaluga Hybrid or Siberian Sturgeon. It stands out best on something pale, like sour cream or egg yolk filling. Keta salmon roe gives you bright orange pearls that pair naturally with smoked salmon, cucumber and cream cheese.

Use both and the table looks twice as interesting. Treat caviar as the finishing touch, never part of a hot filling, so the pearls keep their pop.

Hosting a crowd?

The Table has three sturgeon caviars and Keta salmon roe, 125g each, plus caviar butter, blinis and truffle chips. Built for 8 to 10 guests.

1. Deviled egg eyeballs with sturgeon caviar

A classic deviled egg with a costume on. A thin cucumber slice is the iris, a small spoonful of caviar is the pupil.

Makes: 12 halves · Time: 30 minutes

Ingredients

  • 6 large eggs
  • 2 tbsp sour cream
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Salt and black pepper
  • 12 small, very thin cucumber slices
  • About 0.5 oz (15g) sturgeon caviar
  • A little beet juice for "bloodshot" lines (optional)

Method

  1. Hard-boil the eggs, cool them in ice water and peel. Halve lengthwise and pop out the yolks.
  2. Mash the yolks with sour cream, mayonnaise and mustard until smooth. Season lightly and pipe or spoon back into the whites.
  3. Top each with a cucumber slice and about half a teaspoon of caviar in the center.
  4. For extra effect, draw a few fine lines of beet juice on the whites with a clean toothpick. Chill until serving.

2. Bat crostini with crème fraîche and caviar

Bat-shaped pumpernickel crostini with crème fraîche and sturgeon caviar

Pumpernickel or dark rye gives you the color without overpowering the caviar. A bat-shaped cookie cutter does the rest.

Makes: 12 crostini · Time: 20 minutes

Ingredients

  • 6 large slices pumpernickel or dark rye
  • 1 tbsp melted butter or neutral oil
  • 1/2 cup crème fraîche
  • About 0.5 oz (15g) sturgeon caviar
  • A few dill fronds or finely chopped chives (optional)

Method

  1. Cut two bats from each slice. No cutter? Small triangles work.
  2. Brush lightly with butter or oil and toast at 350°F for 6 to 8 minutes. Let cool completely.
  3. Spread a small oval of crème fraîche in the center of each bat and top with caviar.
  4. Serve right away so the bread stays crisp.

3. Midnight potato bites with caviar and salmon roe

Purple potato bites with sour cream, sturgeon caviar and Keta salmon roe

Purple potatoes make these look properly witchy. Top half with dark sturgeon caviar and half with orange salmon roe, and the platter does the decorating for you. Can't find purple potatoes? Use small yellow ones and serve on a dark plate.

Makes: 12 bites · Time: 40 minutes

Ingredients

  • 1 lb small purple potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 cup sour cream or crème fraîche
  • About 0.25 oz (8g) sturgeon caviar
  • About 0.75 oz (20g) Keta salmon roe
  • A few small basil leaves or chopped chives

Method

  1. Scrub the potatoes and slice them about 1/2 inch thick. Toss with oil and salt.
  2. Roast on a lined sheet at 400°F for 20 to 25 minutes, until the edges crisp.
  3. Cool for 5 minutes, then add a small spoon of sour cream to each slice.
  4. Top half with caviar and half with salmon roe. Scatter the herbs around and serve warm, not hot. More on caviar and potatoes here.

4. Smoked salmon pumpkins with salmon roe

Smoked salmon and salmon roe do the orange for you. Rolled into little rosettes with a chive stem, they look like tiny pumpkins.

Makes: 12 bites · Time: 20 minutes

Ingredients

  • 12 round slices of pumpernickel or thick cucumber
  • 3 oz cream cheese
  • 5 oz smoked salmon, cut into long strips
  • About 1.5 oz (40g) Keta salmon roe
  • 12 short pieces of chive
  • Black pepper

Method

  1. Spread each base thinly with cream cheese.
  2. Roll the salmon strips loosely and set them on top, folding the edges out slightly into rosettes.
  3. Push a short chive "stem" into the center and spoon a little salmon roe around it.
  4. Finish with a little pepper and keep chilled until serving.

5. Spiderweb caviar platter

Spiderweb caviar platter with an open tin of sturgeon caviar and dark rye crackers

The easiest showpiece on the table. Draw a web on a dark platter, set the open tin in the middle and let guests build their own bites.

Serves: 6 to 8 · Time: 15 minutes

Ingredients

  • A dark round platter or board
  • 3 tbsp sour cream or crème fraîche, in a piping bag or a small zip bag with the corner snipped
  • 1 oz (30g) tin of sturgeon caviar
  • 20 to 24 dark rye crackers or pumpernickel crisps
  • A mother of pearl spoon

Method

  1. Chill the platter in the fridge for 15 minutes so the cream holds its lines.
  2. Pipe straight lines from the center to the edge, like the spokes of a wheel, then connect them with curved lines to form the web.
  3. Open the tin of caviar and set it in the center of the web.
  4. Arrange the crackers around the edge and serve right away. Guests add a dot of cream and a spoonful of caviar to each cracker.

Want a dip version? Spread a mix of cream cheese, sour cream and chopped smoked salmon in a shallow dish, pipe the web on top and spoon the caviar into the center.

Tips for an elegant Halloween spread

  • Use matte black, deep purple or gold platters. Both dark and orange pearls pop against them.
  • Prep the bread, potatoes and egg filling ahead. Add caviar only right before serving.
  • Don't leave cold bites out longer than needed. Refill the platter in small batches instead.
  • Set out small spoons in mother of pearl, glass or wood. Here's why metal is a bad idea.
  • Two or three decorations max. Spooky, not cluttered.
