The only set in our lineup designed for a full dinner party. Five 125g tins span the full caviar spectrum: four sturgeon species plus Keta salmon roe. Built for hosting eight to twelve guests with caviar as the centerpiece, not an accent.
The flight is calibrated mild to bold. White Sturgeon (Acipenser transmontanus) opens — mildest, nutty, the most approachable. Osetra (Acipenser gueldenstaedtii) follows — the classic, balanced. Kaluga Hybrid (Acipenser schrenckii × Huso dauricus) — buttery, creamy, the closest legal alternative to Beluga. Siberian (Acipenser baerii) — bold, mineral. End with Keta salmon roe as the textural and flavour contrast — bright orange pearls, briny pop, larger and more assertive than sturgeon.
Serve in this exact order. Each species sets a baseline that the next builds on. The Keta resets the palate at the end.
The set includes French mini blinis, Torres black truffle chips, caviar butter for spreading, and a mother-of-pearl spoon. Open all five tins when guests arrive — caviar warms slightly on serving plates and reaches optimal temperature within minutes. Bake the blini from frozen, serve warm.
