The fastest way to identify your caviar species. Four 15g tins — Osetra, Kaluga Hybrid, Siberian, White Sturgeon — designed as a discovery flight, not a meal.
15g per tin is roughly 5-6 spoonfuls — enough for one to two people to taste each species twice and form an opinion. The set is built specifically as a learning tool. Once you've identified your preference, the next purchase moves to a 30g, 56g, or 125g tin of that single species in your preferred size.
Each species occupies a distinct position. White Sturgeon (Acipenser transmontanus) is mild, nutty, gentle salinity — the most approachable, the best entry point. Osetra (Acipenser gueldenstaedtii) is the classic — nutty, balanced, what most reference points compare against. Kaluga Hybrid (Acipenser schrenckii × Huso dauricus) is buttery, creamy, longest finish — the closest legal alternative to Beluga. Siberian (Acipenser baerii) is bold, mineral, with a snap rather than dissolve — the species that pairs naturally with sharper, drier accompaniments.
Taste mild to bold: White Sturgeon, Osetra, Kaluga Hybrid, Siberian. First spoonful plain (off the back of the hand or directly into the mouth). Second spoonful on a small piece of unsalted toast or warm blini. The plain bite shows the species' true character; the bread bite shows how it interacts with carriers.
Most first-time buyers settle on Osetra or Kaluga Hybrid. Experienced buyers gravitate to Siberian or Beluga Hybrid. The Taste tells you which camp you're in within twenty minutes.
For tasting, plan around 14g per person. For a more generous caviar service, plan 28g–56g per person.
Serve chilled, open each tin just before enjoying, and use a pearl spoon for the best tasting experience.

The single most common mistake first-time caviar buyers make is under-buying. They see the price per tin and order the smallest size, expecting a small tin of an expensive food to go a long way. It doesn't. Caviar is meant to be tasted in real portions — 10 to 15 grams per bite — and those portions add up quickly.
