The fastest way to find your caviar species. Four 15g tins (Osetra, Kaluga Hybrid, Siberian, White Sturgeon), designed as a discovery flight, not a meal.
Each 15g tin holds roughly 5 to 6 spoonfuls: enough for one or two people to taste each species twice and form an opinion. Once you know your preference, move to a 30g, 50g or 125g tin of that species.
Each species has its own position. White Sturgeon (Acipenser transmontanus) is mild and nutty with gentle salinity, the most approachable entry point. Osetra (Acipenser gueldenstaedtii) is the classic: nutty, balanced, the reference most caviar is compared against. Kaluga Hybrid (Acipenser schrenckii × Huso dauricus) is buttery and creamy with the longest finish, the closest legal alternative to Beluga. Siberian (Acipenser baerii) is bold and mineral, with a snap rather than a melt, and pairs naturally with sharper, drier accompaniments.
Taste mild to bold: White Sturgeon, Osetra, Kaluga Hybrid, Siberian. First spoonful plain, off the back of the hand. Second spoonful on a small piece of unsalted toast or a warm blini. The plain bite shows the species' true character; the bread bite shows how it works with a carrier.
Most first-time buyers settle on Osetra or Kaluga Hybrid. Experienced buyers gravitate to Siberian or Beluga Hybrid. The Taste tells you which camp you are in within twenty minutes.

The single most common mistake first-time caviar buyers make is under-buying. They see the price per tin and order the smallest size, expecting a small tin of an expensive food to go a long way.
