What makes Kaluga Hybrid (Acipenser schrenckii × Huso dauricus) worth this size is the way it holds attention. Where Osetra is "the classic" and Siberian is "the bold," Kaluga is "the experience." The buttery texture coats the palate. The finish runs long enough that you find yourself waiting between bites just to feel it fade. It's the species closest in profile to true Beluga — which has been illegal to import to the US for two decades.
This size is built for two people sharing a single tin across one evening. Open it at the start of dinner. Eat one spoonful plain to register the species' character. Then move to blini with caviar butter underneath — the butter amplifies the flavour without competing. Move to small toast points with crème fraîche if you want the textural contrast.
Pour Brut or Blanc de Blancs Champagne to start. A dry Riesling or aged Champagne for the final spoonfuls — both cut through the cream and reset the palate.

Each caviar has its own flavor profile. Kaluga Hybrid is smooth, buttery, and refined. Beluga Hybrid is delicate, creamy, and luxurious. Osetra is nutty and complex. Siberian is bold, briny, and classic. White Sturgeon is clean, elegant, and approachable.
Keep caviar refrigerated at all times. Store it in the coldest part of your refrigerator and avoid freezing. Once opened, enjoy it as soon as possible for the best flavor and texture.
Caviar pairs beautifully with blinis, crème fraîche, caviar butter, potato chips, soft-boiled eggs, champagne, dry sparkling wine, or chilled vodka.
The single most common mistake first-time caviar buyers make is under-buying. They see the price per tin and order the smallest size, expecting a small tin of an expensive food to go a long way.
