At 250g, Siberian (Acipenser baerii) is the host's statement choice. The species is more polarizing than Osetra and more structured than Kaluga Hybrid, and at this size it says something about the host's taste, not just the budget. Guests who know Siberian will notice immediately. Guests who don't will learn something about caviar.
It suits specific occasions: dinner parties with a host who genuinely loves caviar, industry events where people know the difference between species, and business dinners with guests from food and hospitality.
The mineral, clean profile does not tire the palate across servings. Guests can return to the tin three or four times in an evening without it becoming heavy, and the smaller pearls keep it interesting from the first spoonful to the last.
